Udon, this is one of the Japanese soul food and I am sure that you would love it...!
There is long hostly of Udon in Japan, and it continues evaluating.
The most famous Udon is provably "Saluki-Udon", it is bit chewy but has similar taste and chweiness as Mochi. Another udon with strong chewiness is "Musashino-Udon". This udon is hard to bite, so it is worth to eat once (this is famous around Tokyo and Saitama).
However, udon in Okayama is more soft and smooth chewiness.
